Last Friday, I spent the day at Moxon’s Fishmongers in East Dulwich to see exactly how a local fishmonger works.
Arriving early (5 am) to watch the team set up, I saw how much care and knowledge go into every step—from selecting the fish to prepping it for the display. The variety of seafood was impressive: from staples like salmon and cod to seasonal finds that would inspire any home chef.

Taking the advice of Alex, Moxon’s manager, I picked up a whole John Dory with purple potatoes and fennel. Following his instructions, I roasted everything in a single tray after blanching the potatoes, and the result was absolutely delicious!
